Yummy Soup!!!

Alright, I'm back after 2 new auditions, a vacation, a new dance team and a new school!! Sorry. it's been a while but im back with lots of new recipes and starting on monday, i will have a new recipe EVERY MONDAY!

Sound good? alright back to the recipe!

Ingredients:

1 can of your favorite plain tomato soup                        
3 tbs. of fennel seed
3 tbs. of Italian seasonings
1 fresh tomato
2 carrots
1 sweet potato
1 onion
4 cloves of garlic


First saute the onion and garlic in a large pot. once they are translucent add the carrot and sweet potato that is peeled and let it simmer. once it has, add your favorite tomato soup!

If you think the can of soup is empty after, that fill it with water and pour that into the soup. This was my grandfather's way of getting every bit of everything! (great tip!)  let the whole soup simmer until the potatoes and carrots are soft, about 20 minutes.Serve with a dollop of rocotta cheese on top!

Memorial Day BBQ Sauce!!

Ingredients
6 Tbs. molasses                                         
1/4 good ketchup
6 Tbs. Spicy or German mustard                   
3 Tbs.Granulated sugar              
4 Tbs. Chilli powder
3 Tbs. Red pepper flakes
1/4 Water
       
Directions
                     
Mix the molasses, mustard, and ketchup together in a sauce pan on medium heat.

Then add the sugar slowly once the thick ingredients have thinned down.

Then add the rest of the ingrediants and spinkle sme salt and pepper.

Let it cook for 15 mins on low heat. Now you can serve this up on any grilled, meat or well, anything you like. Its great if you par-boil chicken wings then brush this bbq sauce on it, grill it then add a little more sauce.....YUM!!!! Happy Memorial Day!!

Easy Everyday Balsamic Vinaigrette

Just in time for summer!


This is a super simple recipe, all I can say is to whisk everything together in any order that you feel like!! 


Whip this up right before company comes, for a snack on the go, or get curled up on the couch with some fresh greens, caramelized onions on top and a drizzle of this amazing dressing!                    
1/4 E.V.O.O 
1/8 Balsamic vinaigrette (Depending on how tart you like it, I like to add a splash more!)
3 Tbs.fresh orange juice 
1 Tbs. Chilly powder 
(I love the fact that chilly powder is not spicy, but you get a smokey flavor on the back of your throat and the thin dusty texture is a great addition!)
salt on pepper to taste

Indulgent Chocolate Truffles



Ingredients 
½ cream cheese
½ cup of mascarpone 
3 cups confectioners' sugar,
3 cups semisweet chocolate chips, melted
Half of 1 vanilla bean

Mix cream cheese, mascarpone, chocolate, and vanilla bean ( to use a vanilla bean- split the it in half and then run your knife down the center of one of the halved pods scraping out all the seeds you can get) together until smooth

Add confectionary sugar, make into a log and let chill in fridge for about 1 hour. Remove and roll into 1 inch balls. To add flavoring if desired- spit into thirds instead of a log, add 1 Tbs of almond flavoring, vanilla, orange, espresso powder, whatever you want. And adults can add icky liquors if they really want to!

After they are in 1 inch balls roll them in crushed nuts, sprinkles, cocoa powder, melted white chocolate, ect. Let your imagination run wild! They will harden by themselves at room temp. or in the refrigerator. This recipe is sure to satisfy your sweet tooth!!

* For a quick entertaining trick put some truffles on a wooded skewer and use as a coffee stirrer, the chocolate will melt into the warm coffee!!!

WALNUT CRUSTED BUTTERMILK CHICKEN CUTLETS NE AND BUTTER SAUCE

Here's a great recipe for a winter dinner! It's easy to make and really great tasting!
Ingredients For Chicken 
6 chicken cutlets (start with 3 and butterfly them).   
1/3 cup seasoned panko.                        
1/3 cup finely chopped walnuts
1/4 cup buttermilk
1/4 tsb. crushed red pepper
1 tsb. salt.
2 tsb. black pepper
1/2 canola oil (for frying).
1/4 cup walnuts

Directions:

Start by heating up some oil in a frying pan. Then dip each cutlet into the buttermilk then the panko then the walnuts. Place into the pan and cook untill golden brown. Spinkle crushed red pepper over the top, add the salt and pepper, and garnish with the sauce and a sundrided tomato!!! This is an easy amazing dish to be served for all!

Ingredients For Sauce
3/4 cup white wine or champane.
4 tbs. butter.                               
2 tbs. water.                              
2 tbs. flour.
1 big handful parsley
1/8 cup heavey cream 


Directions:







In the same pan as the cutlets add the butter, white wine, water, and flour and wisk. Once that is mixed very well add the heavy cream and parsley. Add some salt and pepper if needed. You are now all set to pour over this over the cutlets and enjoy!

Maggie Meets Chef Mary Anne Esposito

On Wednesday, I got to go to my Cousin's restaurant Pesce Blue where he hosted Marie Ann Espostio and chef Walter and his crew prepared 5 courses from her cook book "5 Ingredient Favorites". I got to indulge my taste buds with some extravagent foods. Everything being so creamy, sweet and just amazing it was a great experience to met Marie Ann Esposito too. She is such a warm person. This experience diffenetly made the top of my list!!

Sweet And Spicy Baked Carrots

Here is one more snack before the main courses start rolling out on the blog.

Ingredients 
6 carrots
1 tbs of chili powder 
2 tbs of honey
2 Apples 
1 tbs of O.J.
Salt and pepper 

Start by quartering the carrots and apples into sticks. Lay on a cookie sheet and add chili powder, honey, O.J., and salt and pepper to taste.

Mix thoroughly with hands (the kitchen's best tool) or tongs. Bake at 375 degrees for 12 to 15 minutes or until a light brown color appears around the corners of the carrots.

These are a quite different and amazing snack! Great for a midnight muncher or a last minute appetizer!

Balsamic Tomatoes Appetizer

Looking for something different this Super Bowl Sunday that is healthy, delicious and pretty to look at? This a wonderful appetizer that is very easy to make and quick as well!
Ingredients 
4 ripe tomatoes 
2 tbs of Extra virgin olive oil 
1 tbs of balsamic vinegar 
1 tbs of parsley 
Salt 
Pepper

Grab 4 full, ripe tomatoes and dice them to a size of your desire.

Then, drizzle both the EVOO and the Vinegar on the tomatoes. Roughly chop the parsley and add it over the top. Add some salt and pepper to taste. ENJOY!

Pouched Pears With Vanilla Sugar

This is my original recipe. It's a satisfying sweet, yet savory treat for whenever you need a healthy and delicious snack or dessert. Kids, you will need to make this under adult supervision but it's fairly easy to make and soooo good! 


Ingredients
4 Whole Pears
3/4 Cup of Sugar
2 tbs of vanilla extract
1 Cup of any red wine (Kids: get your Mom's permission!)
1 tbs of cinnamon 
8 tbs of AGED balsamic vinegar
8 tbs of marscopone cheese
1 tbs of almond syrup 
Start by cutting all the pears in half and with a small melon baller, de-seed the pears. Once done with that, pour in the red wine, water and almond syrup into a large skillet on a low flame. 


Pour the vanilla extract into the sugar and let chill in the refrigerator for 5-10 minuites. 


Pour the chilled sugar into the simmering liquid, quickly add in the pears and cover. After condensation bulids up on the cover spinkle in the cinnamon, flip the pears over if needed to make sure the whole pear in cover in the liquid. Then cover and let simmer on a very low flam for 30-40 minuites or intill they are very soft. 


Serve on separate dishes and drizzle the balsamic vinegar over the pear and let the chesse melt on top. 



With this recipe you are good to go for a little slice of heaven!
