After School Snack!

Instead of kids having a pop-tart or "bagel-bites" for an after school snack try this for you or your kids!

-one tomato
-2 tablespoons of veggie cream cheese
-1 tortilla wrap
-salt and pepper
-1/4 cup cheddar cheese

Chop the tomato up into small, diced pieces. Then add all of the cheese into the tortilla, cut in half. Add a pinch of salt and pepper for flavoring and spread the vegetable cream cheese of the cheese and tomato. Close the tortilla and lay it on a pre-heated skillet (with a small drizzle of olive oil in the bottom of it) and let it grill for about 3-4 minutes on each side.

Ready to eat right away! Only takes about 6-7 minutes to make! This is the recipe for one tortilla but you could make as many as you want-eyeball the cheese, add some tomato a quick spread of cream cheese and you're done!

Tart Apple Topping for Ice cream

This recipe is so yummy with the contrasting creamy and tartness!

Apples: Chop up four apples and simmer down in a small sauce pan with 1/2 a cup of water and 2 tablespoons of carmel sauce. After about 7 minutes on high the apples should be softened but not mushy.

Drape the apples over 2 scoops of ice cream and drizzle some chocolate sauce over the top. EASY AND DELICIOUS!

Delicious and Easy Chicken Meal

This quick and easy dinner gives you everything. You have your meat, grain and vegetable. These classic flavors seem to just be perfect together with every bite.

Chicken: On a pre-heated skillet (electric or on stovetop) drizzle about one tablespoon of olive oil. Lay each chicken breast out evenly on the skillet sprinkle salt pepper and oregano on each and let them cook for about 5-6 minutes on each side. This is such a easy way to make chicken- I have it in sandwiches for lunch, put on top of salads or add to dishes. It is so flavorful yet healthy and light.

Rice: For this meal I like to use brown rice to keep the light theme going on. Follow the directions on the back of the package to  make the rice.

Onions: Chop up half of a large sized onion and saute it on medium speed in a medium sized pan. After about five minutes add about a tablespoon of your favorite salad dressing (i used a aged balsamic vinaigrette). I like to use something that has a hint of sweetness in it.

Place a heaping spoonful of rice onto the rice and cut the chicken into strips on top of the rice. Add the onions to the top along with a little chopped parsley and diced tomato for color. Very easy meal and can be made for many servings (just make the whole onion). Enjoy! Comment on how it comes out!
